So I came up with a new delicious salad, using ideas from two different recipes and throwing them together. It is incredibly easy and fast to make (less than 5 mins). Here is the recipe!:
1 bag shredded romaine lettuce
1 can garbanzo beans (chick peas)
1 can corn kernels
1 cup walnuts
1 cup Craisins
1/2 block Reggiano cheese (Parmesan would also probably work)
3 tbsps olive oil (roughly)
1/3 lemon
Combine the lettuce, garbanzo beans, and corn (drain and rinse first!) in a large salad bowl. Add in approximately 1c walnuts and 1c Craisins (use more or less to taste). Grate or shred the Reggiano and add it in as well. In a separate bowl whisk together the olive oil and the juice from 1/3 of the lemon. Drizzle the dressing over the salad and mix well. Serves two to three people as a meal; serves more people for an appetizer. Enjoy!
